Alex Velez and Nikhil Arora, two Cal-Berkeley grads, thought environment first when they struck upon an idea that would turn coffee in to dollars. Their "Back to the Roots Ventures" collects coffee grounds from area coffee shops and use them to create grow-your-own oyster mushroom kits. Once the mushrooms are harvested, the spent coffee grounds from the kits can be used as compost in a garden. For those short on time, Back to the Roots grows ready-to-eat oyster mushrooms that are retailed in local markets.
